I realize I have not added anything new to my BLOG for quite some time. With doing 6 - 7 farmers markets a week, supplying stores with product and ensuring I’m up to date on stock there’s very little time to spend on cooking never mind BLOGGING. I finally had a little bit of time after my morning, early afternoon market today to actually create a really tasty supper and I knew I had to take the time to share it with you.

We love bison meat. Its so lean and nutritious and tastes amazing. I will admit we don’t have it all that often, however while driving back from one of my markets a couple of weeks ago, I took advantage of passing one of our local bison farms and stopped in and picked up some ground bison. Since it was already frozen I haven’t gotten around to using any of it until today but I’m so glad I did.

Our normal go-to when we have bison is to make bison burgers and they are terrific, but I didn’t really feel like all that extra meat today so I opted to make a meatloaf on the BBQ. Of course I’ve used some of our great Tasty Kitchen Creations spice blends to season the meat. I did not want to do any real bold flavours as I wanted to ensure we enjoy the true flavour of the bison meat. I opted for using some of our new Grilling Sauce, which just happens to be sugar free, a bit of Everything BUT Salt & Pepper and some 3 Onion Seasoning and Dip mix. I used a very minimum amount of breadcrumbs and an egg for binding. I wanted to ensure the meat was cooked over indirect heat so with my trusty grilling mat on the BBQ I opted to turn on both outside elements on medium high and left the 2 burners in the middle off. I then situated my hand formed loaf over the middle area of the BBQ lengthwise. This allowed both sides of the meat to receive fairly even heat to create an oven effect.

I have provided you the recipe below. I hope you enjoy it like we did.

INGREDIENTS

1.5 pounds ground bison

1 TBSP Tasty Kitchen Creations Everything BUT Salt & Pepper

2 TBSP Tasty Kitchen Creations 3 Onion Seasoning & Dip Mix

2 TBSP Tasty’s Special Grilling Sauce

1/4 cup breadcrumbs

1 egg

More Tasty’s Special Grilling Sauce for basting and as a finishing sauce

INSTRUCTIONS

  1. Place egg is mixing bowl and scramble.

  2. Add breadcrumbs, Everything BUT Salt & Pepper, 3 Onion Seasoning and BBQ Sauce to egg and mix well.

  3. Add ground meat to the breadcrumb mixture.

  4. Mix by hand until blended.

  5. Heat BBQ by turning on both outside elements, leaving middle elements off. This will allow you to have an indirect heat and create an oven effect. Allow BBQ to come to 350 F and adjust heat settings to maintain this type of heat.

  6. While the BBQ is heating shape meat into a loaf shape on a flat mobile surface like a plate or cutting board.

  7. Place your grilling mat on the BBQ and slide the meat onto it to begin cooking.

  8. Cook for approximately 45 minutes (check on it a couple of times to make sure your heat is holding steady and adjust if needed to maintain the right heat and not get too hot or cool off too much).

  9. Brush a layer of Tasty’s Special Grilling Sauce over surface of meat loaf. Resume cooking. Brush with another layer of sauce prior to removing from BBQ.

  10. Place meatloaf on serving plate and allow to sit for 5 minutes to rest and make for easier cutting.

  11. Serve with mashed potatoes or Garlic Parmesan oven fries.
