Grilled / Roasted Spring Asparagus

I always love walking around the grocery store and finding the first nice, small, crisp asparagus spears. Not that big woody stuff you can find later in the summer and sometimes during the winter, the little guys. For me, this is one of those moments when I feel like spring is actually here and should be ready to stay.

Heaven knows there’s lots of ways to prepare asparagus: steamed; cut up in beautiful pasta dishes; wrapped in bacon or prosciutto; in a quiche; stuffed in a chicken breast; in a delicious cream of asparagus soup, and the list goes on. Don’t get me wrong, these are all awesome ways to serve asparagus, but when I find those small, tender, crisp early spring spears in the store, I know they are going home to get roasted in the oven or prepared the same way but grilled on the bbq. The nice thing about this is it is exceptionally easy and takes literally 10 minutes.

INGREDIENTS

1 pound fresh thin asparagus spears

1 Tablespoon Grapeseed or Olive Oil

2 tsp TKC Everything BUT Salt & Pepper Seasoning

2 - 3 TBSP grated Parmigiano Reggiano cheese

INSTRUCTIONS

  1. Preheat oven or BBQ Grill to 400 F/ 204 C.

  2. Gently rinse asparagus spears under cold water to remove any grit and pat dry with a paper towel.

  3. Hold the asparagus spear between your thumbs and forefingers and break. Discard bottom piece.

  4. If cooking asparagus in the oven, place the spears on a baking sheet lined with parchment paper or a silicone pan liner. If grilling on the BBQ, the next step can be done on a plate or bowl.

  5. Drizzle oil and seasoning over the asparagus. Toss gently so all the spears get seasoned.

  6. For oven method: Spread asparagus out on the baking sheet in a single layer. Place in oven.

  7. For BBQ Grill method: simply lay the asparagus on the bbq across the grills.

  8. Either method should take approximately 5 minutes. On the bbq you will want to move the spears around once or twice during cooking period so they do not burn. Do not over cook.

  9. Remove asparagus from baking sheet or bbq to your serving dish. I like to use a long plate for this.

  10. Sprinkle asparagus with cheese.

  11. Serve.
