Tasty Kitchen Creations Curry Seasoning can be used for many curry dishes. Pictured above is a full curry meal featuring Stewed Chicken, Stewed Beef, Trinidadian Doubles and a side of seasoned rice. Today’s recipe is for the Chana, however I promise I will share the recipes for the other great dishes soon.

Chickpea Chana is an easy, healthy and packed with protein. Make it as a main dish (served with roti or doubles) or as a meal side.

INGREDIENTS

1 can chickpeas (drained and rinsed)

1 Tablespoon vegetable or olive oil

1 small onion, chopped

1 clove garlic, minced

1 Tablespoon Tasty Kitchen Creations Curry Powder Seasoning

1 medium potato, pealed and diced in 1 inch cubes

1 stalk celery cut in 2 - 3 inch pieces

2 cups boiling water (approximate)

INSTRUCTIONS

  1. In a 2 litre heavy bottom saucepan heat oil until hot, over medium-high heat.

  2. Reduce heat to medium. Add onions and allow cook until soften, stirring occasionally.

  3. Stir in garlic and curry seasoning. Allow to heat through and wake up the spice aromas, about 1 minute.

  4. Stir in drained chickpeas, potatoes, celery and boiling water (enough to cover vegetables). Allow the mixture to come to a boil.

  5. Reduce heat to medium-low. Allow it to simmer until the potatoes are cooked and water is partially reduced. Don’t reduce all the water as you want your chana to be a little bit saucy.

  6. Remove your saucepan from heat. Lightly mash mixture with a potato masher (just to break up the potatoes and chickpeas slightly). This thickens that sauce just a little and makes the dish a little creamier.

Serve with stewed beef or chicken and roti.
