Homemade Chicken Noodle Soup

We sometimes think that making soup is difficult and time consuming. In many cases, this is really not the case. Once we have a stock or bone broth to start, the rest really isn’t that difficult. In this case we’re going to assume you already have the stock. This can be homemade (fresh or frozen), purchased from a local supplier or health food store, or use the store bought carton type. Of course, the quality of the stock or bone broth you use will have results on your final soup. In this case, we recommend buying better quality brands. Add fresh vegetable, a couple of TKC specialty spice blends, cooked chicken and cooked noodles. Lunch or supper will be on the table in about 40 minutes.


INGREDIENTS

8 cups good quality chicken stock or bone broth (or vegetable stock)

2 cups peeled and sliced carrots

1/2 cup sliced celery

4 TBSP TKC Chicken Bouillon

2 TBSP TKC Everything BUT Salt & Pepper Seasoning

1 1/2 cup cooked chicken, shredded or cut in 1 inch cubes

2 - 3 cups cooked pasta


You will need 2 large saucepans (one - 4 Litre and one - at least 3 Litre size).

INSTRUCTIONS

  1. Add stock or bone broth to the 4 litre saucepan. Place on medium high heat to bring to a boil.

  2. While stock is coming up to a boil prepare your carrots and celery.

  3. Place 6 cups water in the other saucepan. Place on high heat and bring to a boil.

  4. Once stock has come to a boil add Chicken Bouillon, Everything BUT Salt & Pepper, carrots and celery. Once it returns to a boil, reduce heat to medium low and maintain a soft simmer for approximately 20 minutes (or until vegetables are cooked).

  5. Once second pot of water comes to a boil add the raw pasta. Reduce heat and allow pasta to cook until al dente (do not overcook). They will finish cooking when they are added to the soup.

  6. Drain pasta. Rinse briefly with cool water. Set cooked pasta aside until vegetables are cooked.

  7. Once vegetables are cooked add chicken and cooked pasta. Increase heat briefly to bring back to a boil. Reduce heat to medium low, allow to cook for 3 - 5 minutes until chicken and noodles are hot.

  8. Soup is now ready to serve.
